Paty's Oat Bran Muffin Recipe

Paty's Oat Bran Muffins         
1/2 C packed brown sugar
1 1/2 C oat bran cereal
1 1/2 C spelt flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
1 cup chilled applesauce (I like them best with homemade chunky applesauce.)
4 Tbsp. olive oil 
1 cup craisins
Preheat over to 400 degrees F. Line 18 muffin cups with paper liners or grease. Blend together dry ingredients and craisins.  Mix eggs, applesauce, and oil, pour into dry ingredients and mix until blended. Spoon batter into muffin cups. Let stand 10 minutes. Bake 15 minutes or until golden brown. Yield: 18 muffins.
